Marinade:
8 cloves garlic
1 1/2 c. fresh cilantro
1 c. white vinegar
3 bay leaves
2 tsp. ground cumin
2 tsp. dried oregano
2 tsp. dried thyme
ground pepper
1 T. salt
1/2 c. chopped onion
1/2 c. vegetable oil
6 skirt steaks 7oz each ....................................


Chimichurri Sauce:

6 cloves garlic
1 bunch parsley
3 bay leaves
2 jalapeno cut
1 tsp. salt
1/4 c. oregano
1/4 c. distilled white vinegar
1/3 c. olive oil

Directions:
Directions:
Marinade:
Place all above ingredients in blender (except steak). Process until coarsley chopped. Place marinade and steaks in glass pan or plastic bags and marinate in fridge 3 hours or overnight.
Sauce:
Combine garlic, parsley, bay leaves and jalapeno in food processor and finely chop. Add salt, oregano, vinegar and oil. Process 1 min until well combined. Grill Steaks and serve with sauce.
