2- 8 oz. pkgs. whole white mushrooms, stems removed, wiped clean with a paper towel
finely shredded cheese
1 stick butter
A few shakes of Lousiana hot sauce
Progresso Italian bread crumbs- 1 round container
Hormel bacon bits
one green onion, finely chopped

You can divide the base into three parts and continue with the two versions below:
if desired: 1 pkg. frozen spinach in butter sauce, drained
1 can lobster or crab drained, and a fresh lemon

Remove stems from mushrooms and chop finely. Chop green onion finely. Add to 1 stick of butter and hot sauce and microwave 2 minutes. This is the base of the filling. If you want, you can add some Hormel bacon bits during this microwave time. Another favorite is a Florentine version. Buy one box of frozen spinach in butter sauce, thaw and squeeze dry. Mix some into part of the base mixture. Another version would be a crab or lobster stuffed mushrooms. Take part of the base and mix it with canned, drained crab or lobster. Sprinle that with some fresh lemon juice.
Mix well. Get a round glass dish/pie plate for the microwave and put 10-12 mushrooms around the outer edge. Put a tablespoon of the mix on each mushroom, pack it in with the spoon. Top with a generous pinch of the shredded cheese. Microwave for 1 minute 30 seconds then decide if they need a bit more time.

You can get creative with this recipe and add or delete items according to your taste. This mixture (without mushroom stems included) can be put on Triscuits for guests who do not eat mushrooms. Reduce the microwave time for the Triscuit topped version.
