1/2 bushel mesquite beans (pick in September)
1 box Sure-jel
7 1/2 c sugar
2 c plum juice or 1 c lemon juice

Directions:
Directions:
Pick mesquite beans without bug holes, not off of the ground (too old to use). Use those that are succulent with a red tinge on the pod. Wash beans and snap in small pieces. Add juice to those. Cook 1 hr in 3-4 qt. of water. Drain juice. Mash with potato masher and strain. Bring 5 c of the juice to boil and add Sure-jell. Bring mixture to another boil that cannnot be stirred down. Add the sugar and cook 5 min or until jelly will drop off metal spoon in one or two large drops.
