24 cloves garlic, peeled and halved lengthwise
2 Tbsp salt
3 lbs fresh green beans, trimmed
5 Tbsp olive oil
3/4 lb of 1/4" thick country ham slices, cut into strips, 1/4" x 2" long
3 tbsp butter

Directions:
Directions:
Drop garlic in boiling water, cook about 20 minutes, or until tender, and able to mash. Remove garlic with slotted spoon, into a small bowl, and mash with back of wooden spoon. Set aside.

Add salt and green beans to same water and cook beans until tender, 6 to 15 min. Drain, rinse, pat dry and place in large bowl.

Heat 2 Tbsp oil in heavy skillet. Sauté ham about 4 minutes. Transfer to bowl with green beans.

(can be prepared one day ahead, but keep garlic in separate container from the beans and ham)

Melt butter with remaining 3 Tbsp of oil in heavy skillet over medium-high heat, add garlic, green beans, and ham and toss until coated with garlic.

Season to taste with salt and fresh ground pepper and mound green bean mixture on a heated platter and serve. Serves 10.

I found this recipe in Nov. 1992 Bon Appetite Magazine. It is truly a favorite at Eve's house in Charles Town, WV for Thanksgiving. I heard Doug cut the country ham at Eve's this Thanksgiving 2006 week-end with precision. There are never left overs of these delectable green beans.
