1 lb carrots cut into 1/2 inch slices
2 T minced onion
3/4 c mayonnaise or salad dressing
1/3 c water
1 T prepared horseradish
1/4 tsp pepper
1/2 c dry bread crumbs
2 T butter or margarine, melted
1/2 c shredded sharp cheddar cheese

Directions:
Directions:
Preheat oven to 350º. Cook carrots in water until tender. Drain. Place in a 1 quart baking dish, set aside. In small bowl combine minced onion, mayonnaise, water, horseradish and pepper. Mix well. Pour over carrots. Combine bread crumbs with melted butter or margarine. Sprinkle over carrots. Bake uncovered 25-30 minutes. Sprinkle with cheese. Return to oven and bake 2-3 minutes more or until cheese melts.
