2 boneless, skinless chicken breasts
2 T. fish sauce
1 inch piece ginger root chopped
3 green onions chopped
1 garlic clove crushed
salt to taste
hot sauce to taste
1 diced mango

4 T. mayo
1/2 c. chopped cilantro
juice of 1 lime
combine together

Heat oven to 400. Lightly grease 2 baking sheets. In food processor blend chicken, fish sauce, ginger, onions, garlic, salt, and hot sauce until finely chopped.
Divide mixture into 20 walnut sized pieces. With wet hands, shape into balls and flatten. Bake until golden on each side and cooked through. Approx. 8-10 min. Serve with diced mango and lime mayo.
