1 eggplant
2 tsp. green onion finely chopped
1/4 tsp. Oriental chili paste with garlic
1 tsp. Tamari or Soy Sauce
1/8 tsp. salt

Directions:
Directions:
Heat oven to 400º and bake eggplant until soft, approx 45 min.
Cool and peel eggplant, separate seeds from pulp, (optional). Chop finely and place in a small bowl. Add onion, chili paste and soy sauce. Beat with a fork until blended.
Adjust seasonings to taste and serve with crackers.
