Ingredients: 1 1/2 lbs chicken breast cut into small pieces 1 egg white 2 T. soy sauce 1 T.cornstarch 1 clove garlic 1 small red onion chopped 2 small red peppers (diced) 3 T. vegetable oil
Black Bean Sauce 2 T. black bean sauce (Lee Kum Kee or Kikkoman) 1 T. chili garlic sauce 1 tsp sugar 1/3 cup water 1 T. cornstarch

Directions:Cut up chicken and place in a bowl with egg white, soy sauce, and cornstarch. Mix ingredients and set aside in refrigerator until ready to cook.
Heat wok to medium high heat and then add 2 T. oil. Wait till wok is nice and hot and then add chopped garlic and cook until fragrant (less than a minute). Add chicken and cook till opaque (about 4-5 minutes) Set chicken aside.
Add remaining tablespoon oil into the wok and add red onion. Cook for 2 minutes and then add red pepper. Cook together for another 3 minutes. Move vegetables to side of the wok and add sauce. Mix vegetables with sauce for about one minute.
Add chicken back to wok and mix together with vegetables and sauce. Cover wok and cook until ready (about 3 minutes). Serve over white rice. |
