3 1/3 cups GF flour mix
1 tsp. xanthan gum
1 1/2 tsp. baking soda
1 1/2 cups butter (softened)
1 cup light brown sugar (packed)
1/2 cup sugar
1 package (6-serving size) Jello (GF) instant pudding mix (vanilla or chocolate)
1 1/2 tsp. vanilla
3 eggs (room temp)
3 cups chocolate chips
1 1/2 cups chopped nuts (optional)

Mix flour with xanthan and baking soda. Combine butter, sugars in large mixer bowl. Beat until smooth and creamy. Beat in eggs one at at a time. Add pudding mix and vanilla. Gradually add flour mixture; stir in chips and nuts. (Batter will be stiff.) Drop by rounded measuring teaspoonfuls onto ungreased baking sheets, about 2 inches apart.
Bake at 375º for 8-10 minutes

Tip: To get the eggs at room temperature, place in a bowl of tepid water for a few minutes at the start of the cookie preparation.
