Soften in top of double boiler
2 envelops Knox gelatin
2/3 c cold water
Place over boiling water and stir until dissolved. Add 1-cup sugar and stir until dissolved.
Pour the hot gelatin mixture over the syrup and beat until thick (about 15 minutes). Stir in 2 teaspoons vanilla. Store in one-quart wide mouth jar in refrigerator, spoon out as needed.
