2 squares unsweetened chocolate, 2 Tbl. butter, 1 c. sugar, 2/3 c. evaporated milk, 1 tsp. vanilla, 1 quart peppermint ice cream (soft) 1 pastry shell(9 inch pie crust)
MERINGUE: 3 egg whites, 6 tsp. sugar, 1 Tbl. water, 1/4 tsp. cream of tartar, 1/2 tsp. vanilla, 3 Tbl.crushed up peppermint candy sticks

Bake pie crust at 350º 10- 15 min. or until golden brown. In a heavy sauce pan melt chocolate and butter over low heat. Stir in sugar and milk. Cook and stir for 8 min. or until sugar is dissolved. Stir in vanilla. COOL completely.Spread 1/2 the ice cream into pie shell, then freeze until firm.Spread 1/2 the chocolate mixture over ice cream ; freeze until set. Repeat layers. Freeze for several hours or even over night.
In large sauce pan, combine the egg whites, sugar, water, and cream of tartar. With mixer beat on low speed for 1 min. Continue beating over low heat until mixture reaches 160º about 12 min.
Remove from heat add vanilla; beat until stiff glossy peaks form and sugar is dissolved. Fold in peppermint candy. Spread over top of pie. Cover and freeze until serving.

you may have the pie in freezer for up to 2 months. But believe me, once you cut it, it's gone. If you don't like meringue serve with whipped cream.
