2 lg. leeks, chopped finely
2 med. onions, chopped
4-5 cloves or 1/2 T. garlic

4 eggs
3/4 lb. small curd cottage cheese
big bag frozen spinach 2+ sticks butter/margarine
2 lbs. philo dough (may be found in freezer section)


Some combination or all of the following seasonings:

Beau Monde
Basil
Oregano
Garlic
Italian Seasoning
Dill

There is lots of room for improvization in this recipe.
Prepare the spinish by thawing, draining and squeezed out.
Saute and season leeks, onions, garlic. In a separate bowl, combine eggs, cottage cheese, and spinach. Add vegetables to this mixture. Add 1 T. melted butter.

Melt 2 sticks butter. Using 2 sheets of philo dough at a time, brush lightly with butter, put 2 more sheets on top and brush with butter. Put 2 spoons of filling and spread it out in a row at one end. Fold sides over and roll it up. Place in buttered baking dish. When pan is full, butter the rolls wherever the brush can reach. (Philo dough dries out very quickly, so you may want to put a damp towel over the unused dough while you are working.) Bake at 350º for 45 minutes or until golden brown.

I enjoy adding cooked ground beef.
Can assemble the night before and bake in the morning. These are a very yummy taste of the Mediterranean.
