Sweet Potato Balls Recipe

4 large sweet potatoes
2/3 cup packed brown sugar
2 tblsp orange juice
1 tsp orange zest
1/2 tsp ground nutmeg
2 cups sweetened shredded coconut
1/2 cup granulated sugar
1 tsp ground cinammon
1 large marshmallow per potato ball

Directions:
Directions:
Preheat oven to 350 degrees

Bake the potaoes until tender, then peel and mash them.

Stir in the brown sugar, oragne juice, zest and nutmeg.

In a separate bowl, toss the cocnut iwth the sugar and cinammon.

Press mashed potato around each marshmallow, creating a 2 to 3 inch diameter ball.

Roll the balls in the coconut mixture and palce on a cookie sheet.

Bake for 15 to 20 minutes,

Watch carefull the last few minutes of baking, the expanding marshmallow can cause the potato balls to burst open.
