2 cups chicken broth
15 oz can cannellini beans, rinsed and drained
14 oz can tomatoes, drained
2 carrots, peeled and chopped
1 white onion, chopped
2 cloves garlic, minced
1 lb smoked turkey or beef sausage, sliced
salt and pepper to taste

Directions:
Directions:
In a large pan combine broth, beans, tomatoes and carrot. Bring to a boil. Reduce heat and simmer until carrot is tender.

In a skillet, saute sausage, garlic and onion. Add to soup. Stir in spinach.

Use tomatoes with herbs or spices to kick it up - regular to keep it mild.
