Directions:
Slice meat into square pieces - not over 1 1/2 inch thickness. Place in pan and salt heavily. Let stand for 24-48 hours; adding salt during this period and turn meat. Wash excess salt off of meat and place in fresh water overnight. Then drain meat and pepper heavily and hang to dry.
