1 1/2 cups Brown Rice Flour
1/2 cup Potato Flour
1 t xanthum gum
1 t soda
2 t salt
1 t cinnamon
3 cups thick rolled oats (Use certified GF oats)
2 eggs
1 cup butter
2 cups brown sugar
2 t vanilla
2 cups raisins
1 cup toasted sunflower seeds (optional)

Directions:
Directions:
Cream butter and sugar. Add eggs one at a time and beat after each. Turn off mixer and add xanthum gum, soda, salt and cinnamon. Mix slightly. Add the flours and mix. Add the oatmeal and raisins and mix. Drop by spoonfuls on Exopat sheet. Bake 375 degrees for 10 minutes.

These are best if cooked just a little browner. I like more raisins so I would add even more than the receipe calls for. When you make these, eat one for me. No, make that 2. One for each hip!!
