4 C. rice cooked, cold
4 Tbsp. vegetable oil
3-5 eggs, beaten (may add more if you like)
1 tsp. salt
pepper to taste
Soy sauce to taste (I use at least 1 C.)
1 bunch scallions, chopped
1 bunch bean sprouts
fresh mushrooms, sliced (if desired)
cooked and chopped meat of choice (chicken, pork)

Directions:
Directions:
Heat oil in wok at 400º.
Break rice apart and add to wok stirring rapidly and constantly, until warm.
Important part: Make a well in the center of the rice and pour in beaten eggs. Scramble eggs, then stir into the rice.
Add salt, pepper and soy sauce, stir for 1 minute. Add vegetables and meat and cook until heated.
