1/2 cup green onions with tops, chopped
1/2 cup celery, finelly chopped
6 Tbsp. butter
6 Tbsp. flour
6 cups chicken broth
1/4 cup lemon juice
1 bay leaf
1 tsp. salt
1/8 tsp. red pepper
1/4 tsp. whole thyme
3 cans (14 oz.) artichokes

Directions:
Directions:
In large saucepan, saute onions and clery in butter until soft. Add flour. Cook one minute stirring constantly. Add broth and lemon juice stirring until well blended. Add bay leaf, then seasonings a little at a time. Seperate drained artichoke bottoms from leaves. Add bottoms to soup, and cover pot. Simmer 20 minutes. Puree in blender or food processor. Add artichoke leaves and stir until blended through soup. May be prepared a few hours ahead to this point. Heat and serve. Garnish with slice of lemon and finely chopped parsley.
