1 7oz coconut
1 cup chopped pecans
1 - 16 oz cool whip
1 - 12 oz caramel topping (the squeeze topping works fine)
3/4 stick margarine or butter
1 can Eagle Brand
1 - 8oz cream cheese
2 deep dish pie shells

Directions:
Directions:
Bake and cool pie crusts. Melt margarine in a skillet and toast coconut and pecans on medium heat. Set aside. Whip cream cheese and Eagle Brand. Fold in cool whip. Put 1/4 mixture in each shell.
Drizzle with 1/4 caramel and 1/4 coconut mixture.
Repeat steps. Freeze for several hours.

As served in the Executive Dining Room at Blue Cross/Blue Shield of Alabama's Corporate Office. It is the Chairman's favorite dessert (hence, the name). This recipe makes two pies and they freeze beautifully! They do not take long to thaw…no more than 1 hour so it's great for unexpected guests. Serve on a glass plate and swirl melted chocolate over the pie and plate - beautiful and delicious!
