olive oil
1-2 cans whole plum tomatoes
1-2 shallots - chopped finely
1 green pepper chopped
a couple cloves garlic, minced
1/2 glass red wine
fresh parsley to taste
salt and pepper
a couple pounds of fish made up of calamari, shrimp, mussels, clams and salmon or a dense white fish. Any combination is fine.
1 tin anchovies
fresh linguine

Directions:
Directions:
Sprinkle olive oil on bottom of heavy pot. add shallots and green pepper and 1/2 of the garlic, and let saute until almost cooked through. Add tomatoes and using your hands, crush the tomatoes into the sauce. Let boil for 10 - 15 minutes.

Add 1/2 glass red wine (or white is fine too).
Add parsley and season with salt and pepper. Let simmer for another 15 minutes.

Add fish a bit at a time, and heat through 20 - 30 minutes.

Fry the anchovies with the rest of the crushed garlic and stir until the anchovies kind of melt. Add to the sauce and keep the sauce warm until ready to serve.

Serve with fresh linguine or a thin pasta.
