1 smoked, bone-in ham, about 8 pounds
3/4 cup fruit juice (peach, apricot or pineapple)
1/2 cup port
2 tsp grated orange peel
1 1/2 cups brown sugar, divided
1 tsp Dijon mustard
1/4 tsp ground cloves

Directions:
Directions:
Place ham in large bowl. Stick prongs of fork or skewer deep into the ham.

Combine fruit juice, port, orange peel, one cup of the sugar, mustard and cloves. Pour over ham. Marinate about 24 hours in a cool place. Turn ham several times.

Place ham on shallow open roasting pan, reserving marinade. Bake in 325º F oven, allowing 10 minutes per pound for cooked hams, 25 minutes per pound for uncooked hams, basting frequently with marinade.

Forty minutes before the end of cooking time, remove ham from the oven and drain off any excess fat. With very sharp knife, cut skin from ham. Score fat lightly, cutting uniform shapes. Cover top of ham with remaining brown sugar. Pour remaining marinade around ham. Continue baking until ham is glazed and marinade thickens slightly to form a sauce.

Carve ham and serve with sauce in pan.
