1 head red cabbage (2 1/2 lbs.)
2 c. onion, thinly sliced
1 c. chicken broth
3 T. cider vinegar
2-3 T. red or black currant jelly
1 tsp. salt
1/4 tsp. ground black pepper
1 T. olive oil

Directions:
Directions:
Toss cabbage and onions in a pot with one-half cup of broth. Add all other ingredients and bring to a boil over medium heat. Reduce heat and cook until cabbage is tender. Stir occasionally and add more broth if needed.
