3 lbs. potatoes, diced and boiled
1/2 tsp. each salt and pepper
2 eggs
1 c. unsifted flour
1/2 c. dry breadcrumbs
1/4 tsp. nutmeg
1/4 c. chopped parsley
1 sm. onion, minced

Directions:
Directions:
Use a potato ricer to rice the potatoes onto a paper towel and dry well. Turn into a large bowl. Sprinkle lightly with salt and pepper. Make a well in the center and break eggs into the well. Sift three-quarters of a cup of flour over the eggs. Add breadcrumbs, nutmeg, parsley and onions. Work with hands until mixture is smooth and holds together. Shape into 18 egg-sized balls. Roll in remaining flour. Drop into boiling water, one at a time--do not crowd. Boil uncovered. When all the dumplings have risen to the top, cook for two minutes longer, then remove.
