6 oz. softened cream cheese
1 egg
2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup apple juice
1/4 cup melted margarine
1 egg, beaten
2 cups chopped fresh cranberries

Directions:
Directions:
Heat oven to 350º. Grease and flour bottom of a loaf pan. Beat cream cheese until light and fluffy. Add 1 egg, blend and set aside.
Mix flour, sugar, baking powder, baking soda and salt. Stir in apple juice, melted margarine and beaten egg. Fold in cranberries. Spoon 1/2 batter into pan, spread cream cheese mixture over batter. Top with remaining batter. Bake 65-75 minutes. Let cool 15 min before removing from pan. Keep refrigerated.
