1 lb. Lump Crab Meat
1 1/3 cup bread crumbs
1/3 cup minced green onion
1/3 cup chopped fresh parsley (OK if not fresh)
2 tbsp lemon juice
1 tbsp milk
1 tsp hot sauce
1/2 tsp salt
1/4 tsp pepper
4 large egg whites, slightly beaten
1 1/3 cup bread crumbs (for coating)
2 tbsp olive oil
dipping sauce, if desired (see below)

Directions:

Combine the first 10 ingredients and mix thoroughly. Divide into 8 portions and make patties. Dredge in the breadcrumbs.

Cook patties about 3 minutes on both sides in heated oil.

You can make a dipping sauce quickly by mixing 1/2 cup mayo with tbsp hot sauce, 1 tbsp ketchup, a dash of Worcestershire sauce and a tbsp of horseradish. Season to taste. Heat this in the microwave before serving with the crab cakes.
