6 slices bacon
1/2 c. bell pepper, chopped
1/2 c. celery, chopped
1/2 c. onion, chopped
1 28-oz. can tomatoes, undrained
2 c. white rice, uncooked
3 tsp. salt
1 tsp. sugar
1/2 tsp. black pepper
1/4 tsp. hot sauce

Directions:

Fry bacon in a large skillet until crisp. Remove bacon, crumble and set aside. Saute bell pepper, celery and onion in bacon grease until onions are transparent. In a blender or food processor, puree the canned tomatoes. Add tomatoes, rice, salt, sugar, pepper, hot sauce and bacon to skillet. Cook for about ten minutes on medium heat. Pour into a sprayed or greased large (11" x 7" x 2") baking dish. Cover tightly with aluminum foil and bake for one hour in preheated 350º oven.
