3 medium papayas
1 c. sweet onions, chopped
1 stick butter
2 c. fresh tomatoes, chopped
1 tsp. salt
1/4 tsp. black pepper
1/2 c. Parmesan cheese
1/2 c. plain bread crumbs

Directions:
Directions:
Cut papayas in half lengthwise . Discard seeds, scoop out the red papaya meat, save shells and meat. Saute onions in one-half stick of butter until onions are transparent. Add papaya meat, tomatoes, salt and pepper. Cook uncovered over medium heat for about 15 minutes or until mixture is firm. Spoon into shells, cover with bread crumbs and sprinkle with cheese. Drizzle remaining butter on top. Bake in 350º oven for about 30 minutes.
