2 or 3 lg. ripe plantains
1 tsp. salt
water
1/4 c. sugar
1 1/2 c. vegetable oil

Directions:
Directions:
Peel plantains, cut into 3/4-inch diagonal slices. Soak in salt water for 30 minutes. Remove from water, place on paper towels and sprinkle with sugar. Cover with paper towels and refrigerate for one hour. Fry plantains in oil over medium heat, turning as needed, until golden brown. Place on paper towels to drain excess oil.
