16 oz. fresh shelled crowder peas
2 c. water
1 T. bacon grease
1/2 tsp. each salt and pepper

Directions:
Directions:
Place peas in saucepan with water, bacon grease, salt and pepper. Bring to a boil, lower heat and cook on low for about one hour or until peas are tender. Add more water if necessary. Olive oil and a little liquid smoke can be substituted for bacon grease.

We get crowder peas at a farmer's market in the north Georgia mountains. The best peas are those that have a light pink pod. The little green pods can be snapped and added along with the shelled peas.
