3/4 c. quick grits
3 c. water
1 c. fat free half and half
1 c. sharp cheddar cheese, shredded
2 T. jalapeņos, finely chopped
dash each of salt and pepper
1 egg, beaten
1/2 c. bread crumbs or corn meal mix
2-4 T. olive oil

Directions:
Directions:
Slow boil grits in water and half and half until stiff. Stir in cheese, jalapeņos, salt and pepper. Spread grits onto a sprayed 9" x 13" casserole dish to cool. Refrigerate overnight or at least eight hours. Cut grits into three-inch squares. Dip squares into egg wash and then cover with bread crumbs. Fry in oil until golden brown on both sides.
