1/2 lb. zucchini, sliced
1/2 lb. Roma tomatoes, sliced
1 green bell pepper, chopped
1/2 c. onion, diced
1/4 c. olive oil
1 tsp. Italian seasoning
1/4 tsp. each salt and pepper
1/4 c. Parmesan cheese, grated

Directions:
Directions:
Slice zucchini and tomatoes into 1/2-inch thick slices. In a baking dish, arrange slices, alternating zucchini and tomatoes. Sprinkle bell pepper, onions, oil and seasonings over the top. Place in 400 oven and bake for 30 minutes. Remove from oven and sprinkle with cheese. Return to oven until cheese is melted, about five minutes.
