1 16-oz. pkg. dried black eyed peas
1 lb. smoked sausage, sliced
1 lg. onion, chopped
1 T. olive oil
8 c. water
1 15-oz. can diced tomatoes
1 8-oz. can tomato sauce
1 T. Creole seasoning
1 bay leaf

Directions:
Directions:
Soak peas in water overnight. Rinse and drain. Slice sausage, saute with onions in olive oil. Cook peas in eight cups water for 15-20 minutes on high heat. Add all other ingredients, return to boil. Lower heat and simmer for 2-3 hours. Serve over rice or with cornbread.
