1 lb. yellow squash, sliced
1 med. onion, chopped
1 red bell pepper, thinly sliced
1 c. saltine cracker crumbs
1 1/2 c. cheddar cheese, grated
1 c. milk
2 eggs, beaten
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. black pepper
1/2 stick margarine, melted

Directions:
Directions:
Boil squash, onion, and bell pepper until squash is soft, but not mushy. Drain and allow to cool. Combine with three-quarters of a cup of cracker crumbs, and one cup of the cheese. Mix in the other ingredients saving the margarine, extra crumbs and extra cheese for topping. Place in a well greased 1 1/2-quart casserole dish. Top with extra crumbs and cheese, pour melted margarine on top. Bake in preheated 400º oven for about one hour.
