1 can pink salmon, drained
1/2 can quartered artichokes, drained
1 egg
2 tablespoons grated Parmesan cheese
2 stalks celery, diced
1/4 cup onion, chopped
2 tablespoons fresh parsley, chopped
Red pepper to taste
1 cup seasoned bread crumbs, divided

Directions:
Directions:
Preheat oven 450
Spray baking sheet with olive oil Pam
Combine artichokes, cheese and egg in food processor
Add to salmon
Combine celery, onion, and parsley in food processor until chopped; add to salmon mixture
Add 1/3 cup bread crumbs and red pepper
Shape into 20 to 24 small patties and roll in bread crumbs
Place on baking sheet; spray tops of salmon with Pam
Bake 10 minutes; turn and bake 8 minutes more until brown
Serve with cocktail sauce or zesty tartar sauce
