12 cups day old bread (or cube bread and place in 200º F oven for several hours)
1/2 cup chopped parsley
4 tsp poultry seasoning
1 tbsp salt
1/4 tsp pepper
2 cups chopped onion
1 1/2 cups chopped celery
1/2 cup melted butter

Directions:
Directions:
Cut bread into 1/4 inch cubes (or bigger if you prefer) to measure 12 cups. Add parsley, poultry seasoning, salt and pepper. Toss together lightly.

Cook onion and celery in butter until onion is transparent, pour over bread, toss lightly.

Stuff body and breast cavities of turkey, being careful not to pack stuffing as it expands in cooking.

Makes enough for 12 to 15 pound turkey.

Don't drink too much wine before making the stuffing or it will end up a little over-seasoned.
