2 cloves garlic
2 carrots
2 stalks celery
2 small onions
2 T olive oil
2 qt chicken broth
1 c chopped mushrooms
1 red pepper -- diced medium
1 lb lentils
8 oz fresh chicken or turkey sausage Italian?
8 oz turkey kielbasa, quartered then sliced
1/2 c chopped fresh parsley
1 T dried thyme
1 T dried basil
1/2 t red pepper flakes
1/2 t salt
1/2 t black pepper
6 oz bag of baby spinach

Directions:
Directions:
Chop garlic through onions by hand or in food processor. Saute in olive oil. Add broth, mushrooms and red pepper. Bring to a boil. Add lentils, sausages, herbs and spices. Reduce to medium heat, stirring occasionally for about an hour. When the lentils are soft and it looks like lentil soup, stir in the spinach just before serving.
