6 medium potatoes
2 cups shredded cheddar cheese
6 tablespoons butter, divided
1 1/2 cups sour cream
3 green onions, chopped
6 slices, cooked, crumbed bacon (optional)
1 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Cook potatoes in skins; cool. Peel and shred on coarse
grater. Combine cheese, and 4 tablespoons butter in
saucepan; heat and stir until cheese is almost melted.
Remove from heat; blend in sour cream, onion, salt and
pepper, bacon. Fold in potatoes and spoon into greased 2
quart casserole or glass bread loaf pan. Dot with 2 tablespoons butter. Can be
frozen/refrigerated at this point.) Bake covered at 300º about
25 minutes or until golden brown on top.

Serves: 6-8
