4 eggs
1 c. sugar
1 t. vanilla
1 lb ricotta cheese
1 c. uncooked rice
1 quart milk
1 can crushed pineapple
butter to cover pan

Directions:
Directions:
Cook rice and allow to cool. Mix eggs, sugar, and vanilla. Add ricotta, milk, cooled rice, and crushed pineapple. Butter bottom on 6x8 glass pan. Pour rice mixture into pan. Sprinkle cinnamon on top. Bake 50 mins. at 350,

Place thin knife into center. It should be a little wet. Hardens up later. Cut into squares before serving.
