Ingredients: 1 TBSP Extra Virgin olive Oil 1 1/2 pound boneless chicken breasts cut in slices 1 small onion, chopped 1 clove garlic, minced 1 Large handful of raisins 1 cup tomato puree 2 teaspoons crushed red pepper 1 teasoon ground cumin powder coarse salt, to taste 8 jumbo corn taco hard/soft
Toppings Shredded cheeses Avocado dices tomato dices chopped green onions shredded lettuce

Directions: |
Directions:Heat the oil in a skillet over medium heat. Brown the diced chicken bits until they are golden. Add onion and garlic and cook another couple of minutes to soften onions. Dump in raisins, olives, tomato puree, and seasonings. Sprinkle in a couple of pinches of salt to taste. Bring yr taco filling to a bubble, then turn the heat down to a low and simmer until ready to serve. Warm tacos in oven. Spread avocado slices on taco and fill with taco filling. Layer on the cheese and other toppings and you're good to go. |

Notes: The raisins at first kind of worried me, but they are awesome in this meal. Make sure they are nicely cooked and plump before you take the pot of the stove. Tongue in cheek
