Ingredients: vegetable cooking spray, 1 Tbsp butter, 1 Tbsp light brown sugar, 1 cup rolled oats, 1/4 tsp cinnamon, 1/2 cup whole-wheat flour, 1/2 cup unsweetened apple juice, 1/2 tsp vanilla extract, 1/2 cup warm water, 1 ripe banana, 1/4 cup dried currants or raisins.

Directions:Heat your oven to 350ºF. Spray an 8-inch baking pan with vegetable cooking spray. Make this a team effort. In medium bowl, beat the butter and sugar together until creamy. Kids can add the oats, cinnamon and flour and mix well. In a small bowl, combine the apple juice, vanilla extract and 1/2 cup of warm water. Add this to the dry ingredients and stir to combine. Stir in the banana and currants/raisins. Everyone can help spread the dough into the prepared pan. Bake until the top is golden, about 1 hour. Cool on a wire rack. Cut into 12 squares and serve with big glasses of cold milk. These bars can be made ahead and stored in the refrigerator for up to one week (or so I'm told...in our house they never lasted that long). |

Notes: Pooh Bear and Jay-Jay were loving nick-names for my daughter Maura and son Jason, respectively. As small children they loved to help me bake these cookies that I named for them Pooh Bear and Jay-Jay's Monkey Bars. As I said these never lasted too long. Pooh Bear and her family now live in Maryland, her husband commuting to D.C. every day. Jason and his wife and pets all live in Phoenix, Arizona. I'm known to my grandchildren as Grandma in Europe. Miles away but still in touch over the e-mail.
