4 cups plain flour (I use 1 cup wheat flour, 1 cup soy and 2 cups plain)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon sugar (optional)
2 cups buttermilk or sour milk (I use yogurt and water)
Optional: pumpkin seeds (no shells)

Oven: 450 ‘F/230 ‘C
30-45 min.

Sieve dry ingredients, scoop up handfuls to aerate. Add enough buttermilk to make soft dough. Mix quickly but lightly but enough to form a round loaf. Cut an x across the top before you bake. Ready when sounds hollow when you tap it on the bottom. Wrap a few minutes in a kitchen towel when you first take it out.

Sometimes I add pumpkin seeds as well as substitute a bit of the plain flour with soy or wheat.
