2 cans great northern beans,or Cannelini beans
2-3 16 oz cans chicken broth
(OR 3-4 chicken bouillion cubes plus 4 -6 cups water)
2-3 t. olive oil
2-3 large, chopped celery stalks
2-3 carrots, chopped
1/2 cup chopped onion
1-2 peeled,diced potatoes
2-3 cloves garlic chopped, or 2 t. garlic powder
1 t. salt
1 t. black pepper
2-3 shakes of ground red/cayenne pepper (optional)
2 t. basil
1-2 t. oregano and/OR Italian seasoning
1 t. parsley
1/2 cup diced breakfast sausage or diced salami (optional)
1/2 cup, uncooked small/broken pasta pieces

Directions:
Directions:
In large sauce pan w. cover, put all ingredients, except sausage/salami and pasta. Bring mixture to boil then cook with cover on low simmer for 10 -15 minutes. Stir every 5 minutes. Then add sausage/salami pieces and pasta and cook
another 5-10 minutes.

My Italian father-in-law would whip together something similar to this for a quick Italian meal. I've add potatoes, red ground pepper, sausage/salami over the years for a bit more
flavor. Can be strictly good vegetarian dish.
