1 box yellow cake mix
1 1/3 cups water
4 eggs
2 cups coconut
1 small pkg instant vanilla pudding
1/4 cup oil
1 cup chopped walnuts or pecans

Directions:
Directions:
Blend the cake mix, pudding, water, eggs and oil in large bowl with mixer. beat at medium speed for 4 minutes. stir in coconut and nuts. Pour in 3 greased and floured 9 inch round pans. Bake 350º for 35 minutes. Cool in the pans for 15 minutes. Remove from pans and let cool on a rack. put icing between layers and on top. Do not ice the sides.

Coconut Cream Cheese frosting
4 tbsp butter (softened)
1 8 oz package cream cheese (softened)
3 1/2 cups powdered sugar
2 cups coconut
2 tsp milk
1/2 tsp vanilla

Melt butter in skillet. add coconut stir constantly over low heat until golden brown. Spread coconut on paper towel to cool. cream 2 tbsp butter and cream cheese add milk and beat in sugar gradually. blend in vanilla stir in 1 3/4 cups coconut. spread on cake.
