2 1/2 c. CAKE flour (must be cake flour)
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 c. sugar
1/2 c. shortening
1 c. ripe mashed bananas
1/2 c. buttermilk
1 tsp. vanilla
2 eggs

Frosting
1 lb. box confectioners' sugar (4 1/4 c.)
1 stick margarine or butter
1/2 tsp. vanilla

Preheat oven to 350º. Prepare 2 9" cake pans with shortening and flour and set aside. Mash bananas and set aside. Mix dry ingredients and set aside. Cream shortening and sugar; add eggs, vanilla, and buttermilk. Add bananas. Add Dry ingredients and mix well with mixer (about 2 minutes). Pour into prepared cake pans. Bake at 350º for 40-45 minutes (until cake pulls from the side of the pans and toothpick comes out clean. Frost with buttercream icing.

Frosting
Cream butter, vanilla and sugar with mixer until smooth. Spread oover cooled cake.
