Sea salt (if possible)
Coarse ground pepper
Good quality olive oil
Salad greenery
Radishes
Fresh coriander (if not available use parsley)
Ginger
Radishes
Chilli
Garlic
4 limes (or lemons)
Sesame seed oil

Directions:
Directions:
Wash and trim the fillet. Dry well.
Place coriander seeds,sea salt and pepper onto large plate.
Roll the fillet in the spices, then gently pat olive oil all over the meat.
Heat little olive oil in a large flat pan, and place fillet on the heat, turning over every one and a half minutes, over each of the four sides. Remove when browned all over and cool.
On a serving plate, cut the greenery up finely, then throw over it the fresh coriander, grated ginger, sliced radishes and chopped chilli.
When the beef is really cold, slice as thinly as possible. Arrange it over the greenery.
Make the dressing by chopping up a chilli, crushing the garlic, grating the ginger, add together. Mix the sesame seed oil (as much as wanted) with 4 times that quantitiy of good olive oil). Squeeze the juice from the limes and add to sesame mixture. Pour all over the meat and greenery. Ready for serving.
