1 envelope unflavored gelatin
1/4 cup cold water
1 cup mashed avocado (2 to 3)
1 Tbsp lemon juice
6 oz package dry Italian salad dressing mix
2 cups sour cream
3 Tbsp chopped fresh parsley
dash or two Tabasco sauce

Directions:

Oil a 9 1/2" fluted tart pan with removable bottom.

Sprinkle gelatin over water and let soften for 5 minutes. Cook over medium heat until just starting to boil and gelatin is dissolved.

Blend avocado with remaining ingredients. Add gelatin and mix well. Pour into tart tin and cover with plastic wrap; sealing well to prevent browning of avocado. Chill well.

Turn mousse out onto platter and garnish with rings of sliced olives, chopped tomatoes, diced cucumber, tiny shrimp, etc. Serve with tortilla chips.
