2 envelopes Knox, Unflavored Gelatin
1 3/4 tsp. Sweet 'N Low (7 packets)
4 eggs, separated
1 c. skim milk
2 1/2 c. creamed cottage cheese
1 1/2 tsp. vanilla extract
1 tsp. almond extract
1/4 tsp. salt
Graham Cracker Crust (see below)

Directions:
In medium saucepan, mix gelatin with Sweet 'N Low; blend in egg yolks beaten with milk. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved (about 5 minutes). Pour into large bowl. With electric mixer, add remaining ingredients, one at a time, beating well after each addition. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. In large bowl, beat egg whites until stiff. Fold into gelatine mixture. Turn into 9' springform pan or prepared crust; chill until firm. Garnish, if desired, with sliced fresh fruit. Makes 12 servings. 9O calories per serving without crust.

Graham Cracker Crust

In a small bowl, combine 1/3 cup graham cracker crumbs with %=1/4 teaspoon ground cinnamon. Sprinkle on bottom of 9' spring-form pan. 100 calories per serving with crust.
