1 onion, chopped
2 garlic cloves, mashed
1 can Rotel tomatoes
2 T. oil
1 can tomatoes (diced)
2 c. chicken broth
2 chicken breasts (cooked until tender)
2 jalapenos (finely chopped)
tortilla chips
cheese (grated) Monterey Jack and/or Cheddar

Using a saucepan, saute onion, garlic, cilantro, onion and jalapenos in butter until soft. Pour into chicken broth with tomatoes. Simmer for 1 hour. Place chips in bowl, pour soup on top and top with cheese and fresh cilantro.
