3 tbsp. olive oil
1/3 c. chopped mushrooms (reg or portabello)
1 finely chopped garlic clove
2 c. diced plum tomatoes
1 1/4 c. minced chopped green pepper
1 c. minced onions
1 c. diced celery
1 c. diced cucumber
2 tbsp. finely chopped parsley
2 tbsp. chopped chives
1 tsp. worchestershire sauce
1/2 tsp. tabasco
1/2 c. tarragon vinegar
2 c. tomato juice or V8
2 c. chicken broth
ground pepper, to taste

Directions:
Saute mushrooms in oil. Add onions for 2 minutes. Put all other ingredients in bowl. Stir well, refrigerate.
