3 T olive oil
1/3 C chopped mushrooms
1 finely chopped garlic clove
2 C diced plum tomatoes
1-1/4 C minced chopped green pepper
1 C minced onions
1 C diced celery
1 C diced cucumber
2 T finely chopped parsley
2 T chopped chives
1 tsp. Worcestershire sauce
1/2 tsp. tabasco
1/2 C tarragon vinegar
2 C tomato juice or V8
2 C chicken broth
ground pepper, to taste

Directions:
Saute mushrooms in oil. Add onions for 2 minutes. Put all other ingredients in bowl. Stir well, refrigerate.
