1 1/2 lbs sweet potatoes, peeled
3/4 cup sugar
5 eggs
2 cups heavy cream
1/4 tsp salt
Fresh ground black pepper
nutmeg

Directions:
Directions:
Preheat oven to 300.
Slice potatoes 1/2 inch thick
Place in a steamer rack - steam for 10 minutes until tender and set aside. Mash until smooth.

In saucepan over medium heat, combine sugar and 1 cup water and bring to boil. Boil for 10 minutes until golden brown syrup. Immediately remove and divide among 6 timbale molds or ramekins - coat bottom. Cool. In large bowl combine eggs, cream, salt pinch pepper and nutmeg. Add mashed potatoe and mix. Butter sides of ramekins and fill with sweet potato custard.
Place a baking disch with hot water 1/2 way up ramekins and cover with foil. Bake for 30 minutes. To serve, invert on plate
